Costco’s Chicken Nachos

You’ve been there. Don’t deny it. It’s time for a Costco run, which means that you can potentially save yourself some money by eating lunch on Costco samples. If you go often enough, you’ve probably had the chance to try their Chicken Nachos, which they cook in a deep skillet with ingredients all found at Costco and serve in paper cups with their Kirkland Organic chips.

And you know just how good that stuff is.

For Super Bowl Sunday, I decided to make this for our little family party. It’s so easy even I couldn’t mess it up, though admittedly I had to do a quick Twitter/Facebook check to see if I’d forgotten any ingredients.

First up, you need two cans of the Costco chicken breast. This stuff is so lean that it’s only 5 points for a whole 12.5 oz can. Good stuff! Next, you’ll need one can of refried beans, I used the Rosarita brand, which is sold at Costco. Throw it in a pot and heat on medium.

Next, you’ll need salsa. I used one bottle of Pace Original Picante Sauce, the 8 oz Mild. I was sent two bottles by the Foodbuzz Tastemaker program so I tossed one in and mixed the whole mixture up. Make sure you break up the chicken well and mix everything until it’s heated through. Transfer to a bowl and top with Mexican mix shredded cheese and some chopped green onions.

Serve while still warm with tortilla chips. I got really rave reviews for it during the game and everyone kept eating and eating. I didn’t measure how many servings it made, but I’d approximate about 12, since five of us ate this all afternoon and I still had about a cup leftover.

Each serving is only 3 points, if you can believe that. Plus, it’s probably more than 12 servings because that’s a heck of a lot of chicken nachos. Great, great snack for WW and tasty too!

Costco’s Chicken Nachos

Serves ~12

Ingredients:

  • 2 12.5 oz cans of Kirkland chicken breast
  • 1 can refried beans
  • 1 bottle Pace Picante Mild
  • 1/2 cup shredded Mexican cheese blend, more as needed

Instructions:

  1. Mix the chicken, beans, and salsa in a pot on medium heat, breaking up the chicken. Heat through.
  2. Transfer to bowl, top with cheese.
  3. Serve with tortilla chips.

  1. What’s the WW points for one serving – after you mix everything together (excluding chips). You’re doing great on your weight loss.

  2. It’s hard to say, but the entire recipe is 39 points. If you divide it by 12 (which is actually quite a bit of dip) it’s 3 points per serving.
